Before leaving Fort Collins, we had breakfast at Lucile's which is one of Thad's favorite places to eat breakfast. For good reason. If you are in Boulder, Denver, Fort Collins or Longmont, find Lucile's and have some breakfast.
We sat outside and enjoyed the warm August breezes.
And then, boy did we eat. We had beignets to start, and I ordered the poached eggs with beans which came with a biscuit. I also got a side of collard greens. All were fabulous. Matt got Tres Leches pancakes and a side of andouille sausage.
I'm going to have beans for breakfast more often. They are so warm and good and filling.
